03 The Processed Food Spectrum
We can't just group all processed foods in the same category. Processing exists on a spectrum, where some foods are more processed than others. Processing foods includes alterations in the physical properties of the food, as well as the chemical properties of the food.
The chemical alterations can include adding ingredients, preservatives and other additives, or removing some, like fiber.
Some forms of processing, such as fortification, can actually make certain foods healthier, just another example of the nuances that exist when we're talking about processed foods.
